LE SUQUET | ROUTE DE L’AUBRAC | LAGUIOLE | FRANCE

Enessere for Sebastien Bras, Chef
Born in the trade, his father being maestro Michel, a real institution of French cuisine, Sebastien has been directing the Le Suquet restaurant (which his father founded in 1992) in Laguiole for more than 10 years. A well-known name among the fine cuisine connoisseurs, Sebastien has also been under the spotlight since 2017 when he surprised everyone by deciding to leave the renowned Michelin guide, where his restaurant had earned three coveted Michelin stars. The reasons were explained in a short Facebook video where the chef declared his intention to drop the recognition as “in silence and solitude one can only feel what’s essential”. “At 46 I feel the need to give new meaning to my career and my personal life by only searching for what’s essential”.

One only needs to picture the building where the restaurant is located and the namesake hotel to understand the spirit that has so far moved the Bras family. The building appears to rest between earth and sky, braving the elements, and has been designed and built in a spirit of complete harmony with nature.

Meeting Enessere was almost a mutual recognition. Essentiality, harmony with nature, silence, being in touch with the elements. Something that characterizes Le Suquet, values around which our ENESSERE Hercules Wind Turbine has been designed.
